Beans and lentils have been around since the Bronze Age and are a food staple for most of the world.  Whether it is part of a rice-and-beans dish of the Caribbean, frijoles of Mexico, hummus of the Middle East, the dals of India, tofu and edamame of China and Japan, and the revered cassoulet of France, beans are low in fat, high in protein and contain no cholesterol. 
 
Beans and lentils are nutritional powerhouses of protein, B vitamins and fiber.  They also make an economical addition to any meal! The offerings in the store reflect a fair wage given to the farmer to produce the food.  
 
Anasazi Beans - 1 pound
Anasazi Beans are related to the Kidney Bean. The color fades to dark pink when cooked and has a mild flavor and firm texture. The bean's name, which means "ancient ones," comes from the cliff-dwelling Anasazi Native American tribe of America's Southwest who first cultivated this bean. Anasazi Beans can replace Pinto Beans in any recipe.

Bolita Beans - 1 pound
Bolita beans are considered to be sweeter, richer tasting and easier on the stomach than the Pinto bean. This bean is believed to have been cultivated and developed by the Spanish who settled in northern New Mexico. Bolitas cook faster than Pinto beans and have a marvelous taste.

Borlotti Cranberry Beans - 1 pound
Borlotti Beans are related to the Kidney Bean. They are part of the Cranberry Bean family. These cook up plumper than the Pinto Bean and have a sweet, mild flavor. They're delicious in recipes with sweet or savory spices. Popular in Italian fare, as well as in the traditional Three Sisters' Stew.

Butterscotch Calypso Beans - 1 pound
The Butterscotch Calypso Bean is related to the Kidney Bean. Also known as the Stueben Yellow Eye bean, they are about 1/2 inch in length, oval shaped, ivory colored with a mustard colored splotch radiating from the inner seam. The very center of the inner seam has a white center encircled by a light brown ring. These beans have a mild flavor, firm texture and the colors are retained after cooking.

Cannellini Beans - 1 pound
Cannellini beans are white kidney beans. Also called Fazolia beans and are popular in Italian cuisine. They are about a half inch long, kidney shaped, and have a tough skin. Their flavor is mildly nutty and their texture is smooth and creamy when cooked. Wonderful in pasta e fagoli, minestrone soup, hearty stews, for in a cold bean salad.

Christmas Lima Bean - 1 pound
Christmas Lima Beans are similar to the giant Peruvian Lima but plumper. This is a large bean with a maroon batik pattern over a creamy background. The Christmas Lima is also known as a Speckled or Chestnut Lima, Butter Bean, or Calico Bean. The bean is 7/8" long and maintains its markings after cooking. The bean's chestnut-like flavor combined with its festive coloring are the reason for the name Christmas Lima.
Mix Christmas Limas with sweet corn to make traditional succotash. They are a hearty addition to soups, stews and casseroles, or toss precooked beans in cold vegetable and pasta salads.

Colorado River Beans are also recognized as Red Nightfall Beans, grown in the Four Corners region of the American Southwest. Smooth texture, yet remains firm after a slow cook. Perfect for succotash, salsas or by itself as a main course or side.

Flageolet Beans are immature kidney beans that have been removed from the pod while very young. These have a delicately tender texture with a light and fresh taste. Cooked flageolet beans tossed with lemon and fresh herbs makes for a delightful side dish. This bean is famous for French cassoulets.

Pink Eye Beans - 1 pound
Pink Eye or European Soldier beans have a mild flavor and firm texture. The splashes of color surrounding the center or "eye" of the bean look like the silhouette of a soldier. Grown in the cooler climates of the northern United States.
Can replace almost any white bean in recipes. Use in soups, salads and casseroles or as a part of a cold bean salad.

Scarlet Runner Beans - 1 pound
The Scarlet Runner Bean has a long, green bean-type pod that holds red-streaked beige, medium-size seeds.
Cooked like Pinto and used in dishes such as soups and stews. Scarlet Runner Beans are purple with black streak-like patches. The bean is about 3/4" in length. These beans LOVE a nice long soak and a nice long simmer.

Swedish Brown Beans - 1 pound
Swedish brown beans are related to the Kidney Bean and they are oval shaped, about 1/4 inch long, and a distinctive mustard brown color. They are particularly nice in stews because they will not break down even after overcooking. Tradittionally served in a sweetened puree with smoked pork or game meats. They are beautiful and flavorful as a side dish with butter and chopped fresh parsley or in the spotlight in a hardy pot of baked beans.

Mung Dal are small 1/4 inch, round, olive green bean. The inside of a Mung Bean is dark mustard colored. When husked and split, it is recognized as Moong Dal. Mung Beans have a sweet flavor, soft texture, and are easy to digest. Mung Beans have a long history in India where they originated and were introduced to China many centuries ago.
